The Saignée method of rosé production is rarely used for sparkling wines, it extracts colour from a period of skin contact rather than blending, and is a technique that is used to create sparkling wines with structure, body and aromatic richness.
Part of our small parcel Winemaker Collection, our own Saignée has a unique herby character of crushed rose petals, dried fennel and thyme with a wonderful tannic grip. A true gastronomic wine of elegance and substance that rewards pairing with food. Try saucisson, fried chicken, creamy pastas or soft cheeses like Vacherin.
Grape Varieties: 45% Pinot Noir, 35% Chardonnay, 15% Pinot Meunier, 5% Pinot Blanc
